🌽 Why our Sussex sweetcorn is the best you can get 🌽
One of the most anticipated seasons of all is sweetcorn. This year our very fresh Sussex grown sweetcorn is topping most other fruits and veg on the brix scale. For some context a very good strawberry will be hitting 18, whilst sweetcorn can be right up to 24. These cobs of golden delight really are packed with nutrition and sweetness!
This high natural sugar content is something that hooks people, but also it is the thing that separates the fresh sweet corn miles apart from the stuff that has been sat around for a few days. It not only helps the shelf life overall, but also can transform a product over time. From the moment the cobs are removed from the plant, these sugars slowly starts turning into starch, making kernels less sweet and tender. Fresh is best!
Very similar to its sister ‘Maize’ (or field corn as the Americans call it) sweetcorn goes through all of the same stages of growth, but the method of growing it has evolved over time; further differentiating the animal feed from human feed.
Once the cobs of sweetcorn have been formed and the kernels pollinated, they go through stages of ‘ripeness’… From a clear liquid to a milky liquid to a milky paste, the milky liquid, or ‘milk stage’, is when its best harvested.
When growing maize for animal feed, the plant is left for much longer which allows the Dry matter to get up to 30% so that the readily available nutrients for livestock is there, but for human consumption, we like it nice and sweet !
